I don't think those are Longhorns. My familiarity with Longhorns (mind you, I'm no farmer) is they have much wider horns that turn up higher.
It's all bizarre with these scenes for a Disney fairy tale. You'd think it was some kind of Western with some cowgirl herding cattle dressed as a cow herself.
