Rum & Raisin Chocolate Pots Serves 8

Prep Time: 10 minutes + 2 hours for soaking raisins + 2 hours for chilling Cooking Time: 5 minutes

Energy = 186kcals/ serving Protein = 3.6g/ serving Fat = 5g/ serving Total sugars = 4.4g/ serving

40g raisins
3 tbsps dark rum
150g dark chocolate (at least 70% cocoa solids)
3 large eggs, separated
Anchor Light Real Dairy Cream (approx 1 x 12.5g serving per pot)

1. Soak the raisins in the rum for at least 2 hours, if not overnight, covered. 2. Melt the chocolate with 4 tablespoons water in a bowl over simmering water, and stir together after it has nearly melted. 3. Remove from the heat and stir in the rum from the raisins with the egg yolks until the chocolate has thickened slightly and become glossy. 4. Whisk the egg whites until stiff and fold a large spoonful into the chocolate mixture to loosen it before folding in the rest of the egg whites. 5. Divide the raisins between 8 x 100ml glasses or ramekins and divide the chocolate between the containers. 6. Chill for at least 2 hours, before serving each chocolate pot topped with a generous dollop of Anchor Light Real Dairy Cream.
