Cows are very similar to humans in the way they produce milk. They produce it because they had a calf and that is what the calf needs for nourishment (much like a baby). When the calf is weaned, the mother no longer produces milk (just like humans). But this cycle is disturbed by the calves being taken away from their mothers for uses like veal and the cow still produces that milk like nature intended. This is much like when a human gives birth to a still born baby. She still has to express the milk that is produced at first. But after a while nature can take it's course and she will stop producing milk. That is unless she is still getting expressed. Then the milk will keep coming.
