Breakfast Bruschetta

Per Portion:
Fat 1.1g (of which saturates 0.2g)
Cals 169 calories
Carbs 33.2g (of which sugar 11.6g)

Ingredients:

4 slices speciality bread e.g. seeded batch
2 small ripe bananas
150g quark
6 tsp granular Canderel
100g blueberries
extra Canderel for sprinkling

Method:

Toast the 4 slices of bread or if preferred, toast on a hot ridged griddle pan.

Whiles the bread is toasting, mash or thinly slice the bananas in a medium bowl. Add the quark and sweetner, mix together. Spoon onto the toast and top with blueberries.

Sprinkle with extra sweetner if wished.

Tip: top with other fruit such as redcurrants, raspberries or chopped strawberries.

Quark is an excellent source of both protein and calcium so this would make a healthy choice for breakfast, particularly for vegetarians.
