Red White and Blue Salad

Refreshingly different, the Summer Berries calm the strong flavour of the blue cheese, without taking any of the taste away. Healthy and Delicious, this recipe is perfect for an easy picnic.
Take:
- 40 g Chopped pecan nuts
- 30 ml raspberry vinegar
- 30 ml balsamic vinegar
- 30 ml olive oil
- 220 g mixed salad leaves
- 205 g diced fresh strawberries
- 150 g crumbled Stilton
- 55 g diced red onion
Method:
- Toast the Nuts on a dry griddle pan over a medium heat, until lightly browned
- Mix the salad leaves, stilton, strawberries, onions and nuts in a salad bowl
- In a whisking bowl or jug, combine the Vinegars, and Olive oil and drizzle lightly over the salad immediately before serving
Serve:
In the large salad bowl you mixed it in, with extra dressing, just in case. Serve with a crisp and Simple white wine, such as a Soave.
