Egg and Avocado Wrap

Tortillas are a great alternative to sandwiches, but it can be difficult to find exciting and unusual fillings for them. Here's one which is healthy and delicious.

Take:

  • 4 Medium Eggs
  • 4tomatoes, diced
  • 1 small red onion, chopped
  • 3 tbsp chopped fresh coriander
  • 1 avocado
  • juice of half a lime
  • 4 large flour tortillas
  • 4 tbsp Low fat Mayonaise
  • salt and freshly ground black pepper

Method:

  1. Boil the eggs in a pan of water for about 7 mins. Once they're drained and cooled, peel them and slice.
  2. Place the tomatoes, onion and corriander in a bowl, and mix. Season with the salt and pepper.
  3. Peel, stone and chop the avocado into cubes. Toss the cubes in Lime Juice.
  4. Lay out the tortillas and spread a spoonfull of mayo over each.
  5. Divide the tomato mixture, Avocado and Egg evenly between the four and roll the tortilla around the filling/

Serve:
Within three hours - Keep refrigerated until you're ready to eat them
