Egg and Avocado Wrap

Tortillas are a great alternative to sandwiches, but it can be difficult to find exciting and unusual fillings for them. Here's one which is healthy and delicious.
Take:
- 4 Medium Eggs
- 4tomatoes, diced
- 1 small red onion, chopped
- 3 tbsp chopped fresh coriander
- 1 avocado
- juice of half a lime
- 4 large flour tortillas
- 4 tbsp Low fat Mayonaise
- salt and freshly ground black pepper
Method:
- Boil the eggs in a pan of water for about 7 mins. Once they're drained and cooled, peel them and slice.
- Place the tomatoes, onion and corriander in a bowl, and mix. Season with the salt and pepper.
- Peel, stone and chop the avocado into cubes. Toss the cubes in Lime Juice.
- Lay out the tortillas and spread a spoonfull of mayo over each.
- Divide the tomato mixture, Avocado and Egg evenly between the four and roll the tortilla around the filling/
Serve:
Within three hours - Keep refrigerated until you're ready to eat them
