Hearty Lentil Soup

Serves a family of 4

 

1 x 150g pack Mattessons Turkey Rashers - £1.99

175g red lentils – 28p

1 medium potato, peeled and chopped – 39p

1 litre vegetable stock – 12p

200g can chopped tomatoes - 33p

 

Price per head – 77p

 

1        Chop half of the Turkey Rashers and put into a large pan, stir over a medium heat for 3 minutes.

2        Put the lentils in a sieve and rinse under cold water, add to the pan with the potato, stock and tomatoes. Cover and simmer for 30-40 minutes until the lentils are tender.

3        Meanwhile, grill the remaining Turkey Rashers and cut into small pieces.

4        Puree the soup in a blender. Return the soup to the pan, add the chopped Turkey Rashers and season if needed. 

 

Tips: Serve with crusty bread.
