Hot Cajun Sardines

Ingredients
455g (1lb) sardines, cleaned and heads removed
1 x 15ml spoon (1 tablespoon) Cajun spices
1 x 5ml spoon (1 teaspoon) crushed chillies
1 x 15ml spoon (1 tablespoon) lemon juice
salt, to taste
lemon wedges, to garnish

Method

Preheat the grill

Mix the Cajun spices together with the chillies.
Place the fish into a shallow dish. Sprinkle over the lemon juice and add the spice mixture. Season.

Cook under a hot grill or barbecue for 8-10 minutes, turning once.

Garnish with lemon and serve with crusty bread and a cucumber and tomato salad.
