Name of Sauce: Jamaican Brown Stew

Family – serves 4
Jamaican Brown Stew
3-4 Chicken Breasts - diced
4 carrots – peeled & cut into strips
2 Large tomatoes – deseeded and large diced
50g Garden peas
1 Head of Broccoli – cut into small florets
Sprig thyme
Sprig mint
2tbsp vegetable oil
6 Large sweet potatoes – peeled and diced
- Place the diced potatoes into a pan of boiling salted water and bring back to the boil, leave to simmer for approx 20 minutes
- Heat the oil in a pan & carefully add the chunks of chicken
- Add the carrot, broccoli, peas & thyme to the pan and lightly sauté. Pour over the jar of sauce and simmer for 5 minutes.
- Take a casserole dish pour in
- Place in a pre-heated oven at 220°C. Bake for approx 20 minutes
- While the chicken is in the oven, remove the potatoes from the boil and drain. Mash with a little butter and black pepper until smooth and creamy
- Serve a dollop of mash with a good spoon of the stew and enjoy!
N.B. This has the added bonus of having extra vegetables which is a good way of getting children to eat some of their 5 a day

Spot on and really cuts back on preparation time,a must every sunday
