Loaded Potato Skins with Turkey Bacon Cheese and Spring Onions

4 medium potatoes – baked and cooled - £1.56

1 x 150g pack Mattessons Turkey Rashers-chopped - £1.99

100g cream cheese – 45p

1        spring onions-sliced – 62p

 

Price per head - £1.15

 

1        Halve the baked potatoes and remove the flesh, leaving about one centimetre of flesh, place the mashed potato in a bowl and add the remaining ingredients.

2        Fill the potato skins and bake in a preheated oven at 190`c for 20-25 minutes until golden brown.

 

Tip: Serve with  salsa and salad.
