Roast sirloin of beef with creamy sauté Jersey Royals, mushrooms and baby spinach
Preparation time: 15 minutes
Cooking time: 30 minutes
Serves: 4
Ingredients:
4 8oz sirloin steaks
259g assorted mushrooms
Handful of baby spinach
250g cooked Jersey Royals
250ml cream
100g Parmesan cheese
Salt and pepper
Chopped tarragon
1 bunch fresh watercress
Method:
1. Preheat the oven to 180°C/fan oven 160°C/Gas 4
2. Place the sirloin steaks into a hot frying pan with a little vegetable oil and fry on both sides until golden brown
3. Remove from the pan and cook in the oven for 6 minutes
4. Meanwhile, in the same pan add the Jersey Royals and the mushrooms and fry for a couple of minutes or until the potatoes are golden brown. At this stage add the double cream and the shaved Parmesan cheese and simmer until all the cheese has melted. Add the spinach and season to taste
5. Remove the beef sirloin from the oven and adjust the seasoning
6. Stir the potato and mushroom mix - it should now be quite thick with the cream binding the potatoes and mushrooms onto the top of each steak and serve!
