Rhubarb Crumble

Ingredients:

400g rhubarb (chopped into small pieces.

50g white sugar

225g Kerrygold Butter

110g brown sugar

225g flour

Method:

1. Pre heat the oven to 160°C / gas mark 3.
  
2. Half fill a dish with the rhubarb, and add the white sugar to taste.
  
3. Rub the butter into the flour, add the brown sugar and mix well.
  
4. Spread the crumble on top of the rhubarb, and bake in the oven for 40 minutes.

Serving tip - serve hot with whipped cream.
