Sweet & Sour Prawn & Potato Stir Fry

600g potatoes, diced
1 tbsp oil
200g frozen king prawns, defrosted
2 x 300g stir fry vegetable mix
250ml Sweet and Sour Stir Fry Sauce
227g tin pineapple rings in fruit juice, drained and cut into chunks

Boil the potatoes for 5 minutes and drain.

Heat the oil in a large frying pan or wok and fry the potatoes for 5 minutes.  Add the prawns and vegetables and stir fry for 3 minutes, until the prawns are heated through and the potatoes are tender.

Add the sweet and sour sauce and pineapple and cook for a further 1 minute before serving.

Potato Tip: Use a good all rounder like Maris Piper or Desiree.
