Serves a family of 4
2 x 150g packs Mattessons Turkey Rashers – £3.98
1 red and yellow pepper, seeded and sliced – 72p
2 tsp Cajun spice flavouring or fajita mix – 72p
1 pack of 8 flour tortillas - £1.49
1 red onion sliced
Price per head - £1.72
1 Cut the Turkey Rashers into wide strips.
2 Heat a splash of oil in a large frying pan, add the peppers and Turkey Rashers and cook over a high heat for 2-3 minutes, stirring all the time. Add the Cajun spice/fajita mix and cook for a further 1 minute.
3 Place the tortillas onto a plate, cover with cling film and heat in the microwave for 30 seconds.
4 To assemble, place a large spoonful of the sizzling turkey mixture in the centre of a tortilla. Roll-up and enjoy.
Tip: Serve with shredded lettuce and tomato salsa.
