Carrot Cake Flapjacks

Cook Time: 20 min

Ingredients:

  • 2 cups oats
  • 1 carrot, grated
  • 2 tbsp cinnamon
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 4 medjool dates
  • 1/4 cup desiccated coconut
  • 1/4 cup chopped pistachio nuts

Method:

  1. Preheat the oven to 190 degrees and line a baking tin with greaseproof paper.
  2. In a bowl pour in the oats, grated carrot, medjool dates, pistachio nuts, cinnamon and desiccated coconut. Stir together until well combined.
  3. In a separate bowl, melt together the coconut oil and maple syrup on the hob or in the microwave.
  4. Pour the liquid ingredients onto the dry ingredients and stir through so that everything is well coated.
  5. Tip the mixture into the baking tin and pat down with the back of a spoon until level.
