With Spring being a celebration of fresh flavours, there's still plenty of time to make the most of May's blooming bounty by fashioning seasonal recipes in the comfort of your own home.

Crab & Asparagus Salad

Make your dinner guests feel fancy and tantalise taste buds by pairing fresh, sweet white crab meat with good-for-you seasonal greens - asparagus, watercress and spring onion.

Ingredients

  • 120g fresh white crab meat
  • 20 asparagus spears, trimmed
  • 3tbsp reduced-fat crème fraiche
  • 1tbsp wholegrain mustard
  • Juice ½ lemon, plus wedges to serve
  • 50g rocket

How to cook:

  1. Bring a large pan of water to the boil and cook the asparagus for 2 minutes or until just cooked through.
  2. Drain, tip into iced water to refresh and drain again. Cut each spear at an angle into 2-3 pieces.
  3. For the dressing, mix the crème fraîche with the mustard and lemon juice. Toss the asparagus through the dressing, then place the asparagus spears in the centre of 4 plates.
  4. Place the white crab meat on top of each. Add the rocket and serve with the lemon wedges.
