Just because it's the Yuletide doesn't mean your healthy diet has to go out the window... Just take these gorgeous SUGAR FREE mince pies for instance; they taste just like Christmas with a fraction of the calories.

For the Casing

Healthy Low Carb, Sugar Free Mince Pies

  • 70g Almond Flour
  • 15g melted Lucy Bee Coconut Oil
  • 1 whole egg
  • 1 tsp almond milk

For the Mincemeat

  • Peel of 1 orange and 1 lemon
  • 1 tsp cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 2 tbsp. zero calorie sweetener (optional for extra sweetness)
  • 1 whole Finely diced skinless Apple
  • 1 tbsp. sultanas
  • 1 tbsp. raisins
  • 1 tbsp. dried cranberries
  • 1 tbsp. finely chopped dried apricots
  • Juice of 1/2 Lemon
  • Juice of 1/2 Orange
  • 4 tbsp. Muscle Food Guilt Free Syrup

Method

  1. Preheat your oven to 180C.
  2. To make the tarts, combine all the ingredients in a bowl until a dough is formed.
  3. Divide the mixture into 9 equal balls.
  4. Using a miniature pastry case baking tray (you can make do with a mini cupcake tray) grease with a little more coconut oil.
  5. Press the balls into the cases and mould into tart shapes.
  6. If you're using a cupcake tray, use a fork to indent the top sides of the case all the way around to make the mince pie pattern.
  7. Bake for 10 minutes.
  8. Remove from oven and leave to cool.
  9. Combine all the mincemeat ingredients in a bowl until a sticky mixture is formed.
  10. Spoon in your minced meat mixture and dust the top with some Sukrin sugar free icing sugar.
