Preparation: 5 mins

Cooking Time: 20 mins

Ingredients:

For the meatballs:

  • 450g minced beef
  • 120g breadcrumbs
  • 4 tbsp each parsley, coriander and chives,
  • plus extra to garnish
  • 1 egg, beaten
  • 4tbsp olive oil
  • 1/2 tsp salt
  • Black pepper

For the sauce:

  • 1tbsp olive oil
  • 1tbsp very lazy garlic
  • 1tsp very lazy red chillies
  • 2 tins chopped tomatoes
  • 1 tsp fresh thyme, chopped
  • 1 chicken stock cube, crumbled

Method:

  1. In a large bowl, mix together the beef, breadcrumbs, egg, herbs, 1/2 teaspoon of salt and some black pepper. Use your hands to shape into meatballs.
  2. Heat up the olive oil in a large frying pan (for which you have a lid) and sear the meatballs well on all sides for about 5 minutes (or until golden). Remove from the pan and set aside. Pour away the oil and wipe the pan clean.
  3. Place the remaining 1 tablespoon of olive oil, very Lazy Garlic and Very lazy red Chillies in the pan and cook for 2 minutes. Add the tomatoes, thyme and stock cube and cook for 5 minutes on a high heat.
  4. Add the meatballs back to the pan and simmer gently, covered, for 5 minutes, or until meatballs are cooked through. Serve sprinkled with extra herbs.
