Ingredients:

Poached Eggs

Poached Eggs

  • 1 egg
  • 1 small can of sweetcorn
  • 220ml BRITA filtered water
  • ½ avocado
  • 1 lime
  • 1 garlic clove, crushed
  • 1 tbsp of sesame oil
  • 11 tbsp of miso paste
  • ½ tbsp of apple cider vinegar

Serves: 1

Preparation time: 5 minutes

Cooking time: 10 minutes

Method:

  1. Boil 200ml of water in a pan and add a pinch of salt.
  2. Crack the egg into a ramekin then pour it into the pan. Poach for 2 minutes so it is still gooey inthe middle.
  3. Cut the avocado into slithers and place on the plate,cover in ½ the lime juice and salt.
  4. Place the other half of the lime juice, sweet corn, ½tbsp of miso in the blender and blend until smooth,place onto the plate with the avocado.
  5. Place the rest of the miso paste, water, sesame oil, garlic and vinegar in the blender. Blend until smooth and pour over the plate with the freshly poached egg.
