Red Leicester Burger Recipe

Burgers are the perfect BBQ food and what better way to celebrate the warm weather than with a BBQ and a great burger?

This recipe from The British Cheese Board (britishcheese.com) combines the perfect lean burger with delicious red Leicester cheese and relish, enjoy!

Red Leicester Burger

Serves: 4

Preparation time: 20 minutes

Cooking time 15: minutes

Ingredients:

500g (1lb 2oz) lean minced pork

1 garlic clove, crushed

4 spring onions, finely chopped

1 large carrot, grated

2 tsp mixed dried herbs

3 tbsp chopped fresh parsley or chives

1 red onion, thinly sliced

2 tomatoes, sliced

1 tbsp red or white wine vinegar

2 tsp wholegrain mustard

4 burger buns, sliced in half

A couple of handfuls of mixed salad leaves

100g (4oz) Red Leicester cheese, sliced

Salt and freshly ground black pepper

Method:

1. Mix together the mince, garlic, spring onions, carrot, dried herbs and fresh herbs. Season well, then shape into 4 burgers. Cover and chill until ready to cook.

2. To make the tomato and onion relish, put the onions, tomatoes, vinegar and mustard into a bowl. Season, toss together and leave to marinate while cooking the burgers.

3. Preheat a char-grill pan, grill or barbecue. Cook the burgers for 6-7 minutes on each side.

4. Lightly toast the burger buns on the cut sides. Top with some salad leaves, then place a burger on top of each one. Finish off with slices of Red Leicester cheese and serve with the tomato and onion relish.

Cook’s tip: For a blue cheese burger, top with slices of Stilton.
