Spring Recipes: Lime and Chilli Chicken

Although the weather might not reflect it, we are actually in British Spring time!

Since the weather won’t be warming you up, why not let the creative herbs and spices as well as the chilli in this recipe warm you up?

It’s not only fresh and healthy but also had a great kick so is perfect for welcoming the summer.

Here’s what you’ll need and how to make it –

Lime and Chilli Chicken

Ingredients:

4 Fragata Piri Piri Hot Peppers finely chopped

1kg chicken wings or thighs

Juice of 2 limes

4 green chillies seeded and finely chopped

3 tbsp sugar

1 tbsp olive oil

1tsp salt

Method:

1. Mix everything besides the chicken together in a large bowl until the ingredients bind together.

2. Thoroughly coat the chicken with the mixture.

3. Put all of the ingredients into a polythene bag and shake hard.

4. Marinate in the fridge for an hour.

5. Cook the wings in a griddle pan or on the BBQ for about 20-30 minutes turning frequently, depending on the size (thighs will take a bit longer).

6. Serve with a delicious salad and homemade wedges.
