Prince Ernst August of Hanover - whose temper has made headlines several times since their marriage in 1999 - was convicted of grievous bodily harm against Josef Brunlehner following an incident which took place in 2000 at a hotel in Lamu, Kenya.
The royal was previously found guilty of hitting the night club owner with a hard object because of his displeasure with the music in the club but the latest case was heard in a bid to reduce the charges to assault.
Caroline was called to give evidence at the retrial, and admitted her husband had lashed out, but insisted it wasn't as serious as claimed.
She said: "I observed that my husband slapped Josef Brunlehner twice with his hand flat and that he said, 'One for the music and one for the light'."
Price Ernst August was fined £400,000 when he was first convicted for causing serious bodily harm, but had the fine reduced following the lesser conviction of grievous bodily harm.
