An entire meal packed inside a single bell pepper! Contains black beans, corn, and some extra bell pepper. If you want to add something extra then you can use smoked chicken breast instead. This will still be just as delicious when served as a vegetarian meal!
100 grams broken freekeh, prepare following the instructions on packaging 1 can (400 grams) black beans, rinsed and drained 100 grams canned corn, drained 50 grams bell pepper, chopped into small blocks 1 tablespoon ground cumin A pinch of smoked paprika powder (for a milder version, use regular paprika powder) Salt and pepper
Optional: 150 grams smoked chicken breast, in blocks For variation: use quinoa instead of freekeh
4 bell peppers - halved
Time to prepare: 25 minutes
Prepare the freekeh according to the instructions on the packaging. In the meantime, mix the black beans with the canned corn, chopped bell pepper, cumin, paprika powder, pepper, and salt. Taste, and add more seasoning if needed. Let rest until the freekeh is fully cooked. Finally, mix the freekeh with the rest of the ingredients.
Halve the bell peppers and stuff them with the freekeh salad. They do not have to be heated after stuffing and can be served directly.
