To celebrate National Veggie Burger Day- we have a vegan burger recipe to practice at home. 

Beluga Lentil Burgers

Beluga Lentil Burgers

Ingredients

For the Burgers;

  • 100ml veggie stock
  • 1 pouch of Merchant Gourmet Beluga Lentils
  • 1 onion finely diced
  • 2 cloves garlic
  • 1 carrot grated
  • 2 tbsps of fresh breadcrumbs
  • 1 egg
  • pinch smoked paprika
  • pinch cayenne pepper
  • sea salt

For the Mayonnaise;

  • 100g good quality vegan mayo
  • 1 tbsp of sriracha chilli sauce

To serve;

  • 2 hamburger buns
  • 2 slices of vegan cheddar
  • 2 slices of tomatoes
  • 2 slices red onion
  • 1/2 avocado cut into slices

Method

  1. Firstly, prepare the stock. Once it's come to the boil, take it off the heat, mix in the beluga lentils and blitz with a hand blender or mash by hand.
  2. Next, fry the onion and garlic off with a little oil for 5 minutes until softened. Add them to the lentils and mix in the carrot, breadcrumbs, spices and egg.
  3. Add a little oil to a frying pan and once hot, spoon the mix into the pan to make burger sized patties. Fry for about 6 minutes on each side until golden brown.
  4. Simply mix the chilli and vegan mayo together and spread on the top and bottom of the toasted buns. Layer up the burgers, red onion, tomato, avocado and vegan cheese in the bun and serve.

Everyone loves a good burger, but it's not good to eat too much red meat so these are a really good meat free alternative. They really look like burgers too because of the deep black lentils.The chilli mayonnaise is fun and spicy, I love Sriracha chilli sauce, but realistically you can use whatever chilli you have to hand.
