To celebrate the autumn harvest and British Food Fortnight, Bill’s Restaurants will be going back to its roots as a British greengrocer with a generous initiative that promotes fresh, seasonal vegetables.

Roasted Butternut Squash & Lentil Salad

In collaboration with the Alexandra Rose Charity, Bill’s Restaurants will donate 1kg of fresh vegetables to low-income families for every person that orders the vegan Roasted Butternut Squash & Lentil Salad starter from their new seasonal autumn menu.

The project will kick off during British Food Fortnight on the 23rd September and run until the 23rd October at Bill’s Restaurants nationwide.

Launched by vegetable expert Bill Collison, Bill’s Restaurants first began as a greengrocer in Lewes, East Sussex.

A café was added when it was rebuilt after a disastrous flood before evolving into a restaurant serving eclectic seasonal dishes.

Bill Collison, who is still obsessed with fruit and veg comments: “I’ve grown up planting, pruning and picking fruit and vegetables and they have been the order of the day at Bill’s since day one. We are constantly experimenting with exciting ways of using seasonal vegetables in our dishes and felt we needed to share these wonderful ingredients with families who may not otherwise be able to afford them. The autumn harvest is always a season of generosity and abundance and we are so pleased to be able to help those in need.”

To get involved, customers can purchase the vegan starter of Roasted Butternut Squash & Lentil Salad with pomegranate seeds & lemon dressing (£5.95).

For each dish sold, Bill’s Restaurants will donate the equivalent of 1kg of vegetables such as cauliflower, butternut squash or carrots to the Alexandra Rose Charity.

The charity’s ‘Fruit and Veg’ project distributes vouchers to low-income families across the UK, which can only be redeemed on fresh fruit and vegetables at participating local markets.

Other vegan dishes on the menu include the Sauteed Kale and Shallots (£3.50), the Rustic Butternut Squash Stew (£11.95) with char-grilled red peppers, freekeh, kale and toasted pistachios and the Oven Roasted Ginger and Sesame Cauliflower Steak with roasted cherry tomatoes (£11.95).
