Calories- Courgettes have very few calories in them and have a high water content so if you're a vegan who's looking to shed a few pounds- they are a great addition to many a low-cal dish.

Vitamin C- Vitamin C boosts the immune system in order to fight off illness. It stops the oxidation of bad cholesterol, which reduces the likelihood of strokes and heart attacks.

Potassium- Potassium is integral in controlling blood pressure so if yours is a little high- this is a great food to eat to keep it within healthy levels.

Fibre- Courgettes contain soluble fibre in their skins, which slows down digestion- thus keeping blood sugar and insulin levels stable.

Soluble fibre- Soluble fibre is most important for those who suffer from constipation or IBS as it will make bowel movements more regular.

Antioxidants- Courgettes contain antioxidants, which slow down the ageing process and help to reconstruct brain cells. The vitamin E and the omega 3 fatty acids in courgettes help to activate the absorption of fat-soluble antioxidants- enhancing memory.

Folates- This vegetable also has moderate amounts of folates which are important for cell division and DNA synthesis. If you eat them regularly during the first stages of pregnancy it can help to reduce neural tube defects within the foetus.

Vitamin K- A diet that is high in this vitamin can help with proper blood coagulation and also increase bone health.
