Kohlrabi, Alexander, Sunflower Seeds and Sumac

Serves 6 as a sharing plate

Ingredients

1 kohlrabi, peeled

30g toasted sunflower seeds

2 sprigs of Alexander, leaves and stems shredded together.

Zest and juice of one lemon

A drizzle of rapeseed oil

Method

Cut the kohlrabi into really thin slices, using either a mandolin or a very sharp knife. Assemble the slices flat and overlapping in an even layer on a serving plate. Sprinkle over the sumac and a pinch of Maldon sea salt. The salt will draw out the natural juices of the kohlrabi.

Scatter over the sunflower seeds and Alexander and dress with the lemon zest and juice and a drizzle of rapeseed oil. Finally, sprinkle over the sumac, which will help to lift the dish even further with citrus flavour.
