These rolls are a delightfully light, fresh and vegan alternative to traditional sushi. Getting the sushi rice and the dressing right is key to getting the most out of this recipe! Don’t be daunted, with a little patience it’s really not tricky at all.

Miso Avocado Maki

Serving:

One roll makes eight individual sushi pieces.

Ingredients:

160g cooked sushi rice

Pinch of sushi rice seasoning

1 sheet of roasted seaweed (nori)

¼ avocado (Hass preferably)

Rocket leaves

Chopped chives (to coat the outside)

Miso sauce (see recipe below)

Rolling mat (to roll your maki)

Soy sauce (to flavour)

Method:

- Firstly cook and season your sushi rice. Rise the rice thoroughly before cooking over a gentle heat

Recommendation: To source your ingredients it’s worth visiting a specialist Japanese supermarket if you have one locally. Otherwise, your nearest large supermarket should be able to help. Make sure you rinse it thoroughly before us in cold, running water.

- Add sushi rice seasoning, made from rice vinegar, sugar and salt

- Once cooked roll the rice into a ball and place on your rolling mat. Press until an even sheet

- Place your nori on top, trimming if necessary to ensure there is a 1cm gap at top and bottom (this enables the rice to stick together when the roll is closed)

- Add a generous quantity of your miso sauce

At Abokado our miso sauce is made with a delicious mix of the following ingredients. Vary the quantities below to suit your own taste:

Oil, ginger, Agave, tamari, rice vinegar, balsamic vinegar, sesame oil, chilli and coriander

- Slice your avocado and add in a line. You must ensure it’s perfectly ripe! We only use the Hass variety at Abokado – it has a lovely nutty, buttery texture and flavour

- Add some rocket leaves

- Then the tricky bit – roll!

- Leave for a few minutes, then dust the outside with finely chopped fresh chives

- Cut into eight pieces, present horizontally and enjoy with wasabi, ginger and of course soy sauce.
