Shiitake mushrooms (3 or 4 sliced)
A few slices of aubergine (cut lengthways)
A red chilli
A sprig of fresh coriander to serve
uuni classic pizza sauce (leave out sugar or use vegan)
uuni classic pizza dough
Light up your Uuni 2S
wait 10 minutes
In the meantime:
Slice the aubergine
Place into a baking tray
Sprinkle with salt and drizzle with olive oil
Bake the aubergine slices in the Uuni for 2-4 minutes turning over half way.
Stretch pizza dough into shape
Top with classic sauce
add pieces of roasted aubergine and sprinkle the shiitake mushrooms and red chilli slices over the pizza
bake in the Uuni for 90 seconds, rotating half way.
Take out of Uuni and sprinkle the coriander over the top.
Slice up and Enjoy
(excellent served with chilli sauce and even with a splash of soy sauce)
