Sweet pumpkin, lightly spiced with Cajun Special Blend and blended together with onions, tomatoes and vegetable stock for a warming, tasty soup, ideal for Halloween or bonfire night.
50 gram (2 ounce) butter
1 kilogram (2.2 pounds) pumpkin, peeled and diced
2 onions, chopped
2 tablespoons Schwartz Cajun Special Blend
2 beef tomatoes, chopped1.1 litre (2 pints) vegetable stock
vegan cream to serve
Schwartz Parsley to garnish
Schwartz Cajun Special Blend, to sprinkle

Melt the butter in a large saucepan and fry the pumpkin and onions for 5 minutes. Add the Perfect Shake Cajun Special Blend and tomatoes and cook for 3-4 minutes.
Stir in the stock and bring to the boil. Cover and simmer for 30 minutes, until the pumpkin is tender.
Allow to cool slightly, then purée in a food processor or liquidizer. Return to the pan, heat through and season to taste.
Serve with vegan cream and a parsley sprig. Sprinkle with a little extra Perfect Shake Cajun Special Blend and serve immediately. Great to serve outdoors at bonfires or on Halloween with crusty bread.
