This sweet potato and parsnip mash is a great way to boost your veggie intake whilst satisfying any comfort food cravings. It’s perfect to accompany your roast dinner, for a festive take on bangers and mash, or even eat on it’s own with lashings of gravy and a dollop of cranberry sauce – that’s what we call seriously festive comfort food…
- 1 x large sweet potato
- 2 parsnips
- 2 1/2 tbsp. coconut oil
- 3 tbsp. heaped protein vegan naked
- 1/2 tsp. cinnamon
- Pinch of nutmeg
- 1 tsp. agave
- 1 tsp. mixed herbs
- 1/2 tsp. dried sage
- Salt and pepper to season
Steam or boil the sweet potato and parsnips until soft
Drain, and place back in a pan on a low heat and mash with all your other ingredients until lump free. Serve!
