Turnip Mash

Ingredients:

2 large turnips, peeled and cut into even chunks

80ml extra-virgin olive oil

Sea Salt

Freshly Ground Black Pepper

Method:

  1. Cook the turnip in a large saucepan of salted, boiling water until tender to the point of a knife, about 25-30 minutes.
  2. Drain well and leave to steam off for 2 minutes.
  3. Return the turnip to the saucepan they were cooked in and add the olive oil and some salt and pepper.
  4. Mash thoroughly before serving as a side dish.
