Vegan Burger

Serves: 4

Ingredients:

4 Violife slices with mature cheddar flavour

4 Burger buns

3 large potatoes

2 grated carrots

1 sliced leek

1 chopped onion

1 chopped garlic clove

4 lettuce leaves

2 sliced tomatoes

Freshly chopped basil and thyme

Vegan barbeque sauce

Olive oil

Salt and pepper

Method:

Wash and peel the potatoes, cut into small cubes and boil for 15 minutes until soft. Once they’re soft, drain them, add a dash of olive oil, and mash in a bowl.

Meanwhile, heat a little olive oil in a frying pan, and sauté the leeks, carrots onion and garlic until they’re slightly soft. Remove the pan from the heat, and stir in the basil and thyme.

In a large bowl add the veggie mix along with a little olive oil, salt and pepper to the potatoes and mix them together by hand into a lovely dough-like mix. Form into 4 patties and pop them onto the BBQ!

Lightly toast or grill your burger buns, then spread with a little barbecue sauce.

Then stack the lettuce, tomato, your patty topped with a few Violife slices with mature cheddar flavour and crown with a few rings of onions and any leftover herbs. Delicious!
