Vegan Nutty Bowl

Ingredients

Makes 1 portion

  • 80g cashew nuts
  • 1/2 banana
  • 1/2 teaspoon vanilla powder
  • 1/2 teaspoon cinnamon
  • 10g coconut nectar (1 squeeze)
  • 200ml plain coconut milk
  • 50g muesli (3 tablespoons)
  • 1/2 banana
  • equal pineapple
  • 10g chopped almonds (10)
  • 10g Chopped pecans (10)
  • 10g mixed seeds
  • Drizzle of coconut nectar.

Blend:

  • 80g cashew
  • half a banana
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 200ml coconut milk
  • 1 squirt of coconut nectar
  • Blend on half speed for no more than 30 seconds.
  • Pour smoothie from the blender into the bottom of your serving bowl
  • Scoop 3 tablespoons of muesli into the centre of your smoothie which is already in the bowl

Chop:

  • Half a banana
  • Equal amount of a pineapple
  • Use to cover the surface of your smoothie
  • Chop the almonds (10) and pecans (10) up and scatter across the top of the bowl.
  • Add mixed seeds to garnish with a drizzle of coconut nectar.
  • Put on under plate with napkin and spoon and serve.
