Vegan Protein Flapjacks

Ingredients:

1 scoop of STRIPPD Vegan Lean Protein Powder Mixed Berry

60g of oats

50g of mixed nuts and seeds (pumpkin seeds, sesame seeds, hazelnuts, brazil nuts etc)

60g of dried apricots, chopped

50g of dates, chopped

55g of coconut oil

20g of coconut sugar or caster sugar 2 Tbsp of Maple Syrup

Method:

Lay out all ingredients on your table and pre-heat oven at 180°C/360°F.

Line and oil a flapjack tin.

Melt the coconut oil and sugar together in a large pan and turn off the heat.

Stir in the remaining ingredients until well mixed.

Spread the mixture evenly into the tray, keeping it about 2cm thick.

Bake for about 15 minutes until golden.

Remove from the oven and leave to cool.

Cut into rectangles and store in an airtight container
