Sweet Potato Wrap with grated carrot, roasted sweet potato, red pepper, hummus and spinach

Ingredients for the blueberry vinaigrette:

o ½ Cup of Blueberries

o ¼ Cup of white vinegar

o ¼ cup of Agave

o 6 tablespoons extra virgin oil

Directions for Blueberry vinaigrette:

  • In a blender or food processor, combine all the ingredients
  • Blend until well combined and smooth
  • Refrigerate until ready to serve

Ingredients for wrap

o Hummus

o BFree sweet potato wrap

o Handful of Spinach

o Grated carrot X 2

o Sweet Potato x 2

o Roasted red pepper

Directions:

  • Spread the Hummus evenly on the wrap
  • Grate the Carrot and place on the wrap
  • Cube and roast the sweet potato for 20-25 at 180 degrees C for 15-20mins
  • Cut the roasted red pepper and place on the wrap along with the sweet potato
  • Wrap and roll! Serve and Enjoy!
