Weddings on Female First

Have you just had the question popped and making plans for your big day? Are you in the midst of organising your wedding and not thought about the cake yet? Have you got firm ideas about what you want from your cake design? We talk to Ruth Potts, from Cakes by Ruth about every eventuality when it comes to wedding cakes!

Why is a wedding cake such an important part of the day?

A gorgeous wedding cake is often the centrepiece of a wedding and can be tailored to match the most beautiful aspects of a wedding theme.  The charming tradition of cutting the cake is one of those picture opportunities that graces every wedding album along with the first dance and bouquet tossing. The cake cutting represents the first activity done as a couple although usually they do not cut the entire cake up but instead leave that duty to the caterer!

Why are people veering away from more traditional cakes on their special day now?

Traditionally wedding cakes were set out in a pyramid of tiers, iced in white royal icing and topped with a formal bride and groom, but now there are many more options and people are veering away from traditional more and more, giving suppliers of wedding cakes much more scope to be creative in the design.  This is great news for us here at Cakes by Ruth because we love making sure that every cake is as unique as the couple who are getting married.   We have created cakes that reflect the embroidery on wedding dresses, created the images on wedding stationery in icing, matched endless colour schemes and of course created many icing figures of brides, grooms, entire wedding parties and even the odd pet!

What is the most unusual cake you have been asked to make for a wedding?

We have had many unusual requests over the years; the beauty of a bespoke cake is that you really can ask for anything!  We have made some unusual cakes for winter weddings including a bride skiing down a three tier ski slope towards her waiting groom, and a bride and groom snuggled up in a silver sleigh!

Is there a design that is in vogue currently for wedding cakes?

The look of the cake often reflects the 'theme' of the wedding, the flowers used and the bride's dress, while the flavour has to complement the food it follows or the drink it's served with. Currently we are incorporating edible lace and hand piped designs to match the bride's gown, often with intricate sugar flowers, or a bold statement flower on the top.  Deep tiers are popular to create very tall, slender and elegant cakes.   Simple white, ivory or pale pastel colours have been popular although we do still have requests for bold colours and hand painted patterns on cakes.

How long do you need from concept to finished product when making a wedding cake for a couple?

I always encourage clients to reserve the date as early as they can to avoid disappointment.  However that still gives us plenty of time to finalise all the details before the cake is created.

Do you ever have couples that aren’t sure of what they want and agree on something with you?

It is very common for brides to come to us with either very few ideas or reams of pictures of cakes that they have found on Pinterest and can’t decide between!!  We love discussing ideas, themes, colours and flavours with each couple to create the cake that’s perfect for them.

What is the best part for you of the whole cake making process?

I enjoy meeting couples at the initial consultations to find out more about them, their wedding theme, the dress, the flowers….and of course their ideas for their cake!  I love the creativity of the finishing touches that a make a cake truly unique and I also love assembling the cake at the venue and seeing how well it fits with the rest of the theme.

Why is it important to pay a little more for professional cake making rather than making it yourself?

Planning a wedding can be very stressful; handing the creation of your cake over to a professional cake designer can alleviate any stress that trying to make and decorate a cake a few days before your wedding can bring!  We can guarantee a professional and bespoke finish as well as great tasting cake!

What is the best advice you could give to a couple who are deciding what to have on their wedding cake?

Make sure your cake is a truly memorable part of the day created to compliment the rest of your wedding theme beautifully.  We strive to make sure our bespoke cakes are truly personal to each individual couple.
