As more and more people decide on a changing their lifestyle to accommodate a plant-based diet, people are also getting increasingly more creative about what they're eating. As it's Plant Power Day, we decided to indulge in a little food envy on Instagram and found some absolutely incredible dishes that are encouraging us to turn to plants.

Onigirazu (sushi sandwiches)

We are so surprised to find out that this is a thing. With an actual name. Sushi rice, carrot, lettuce and breaded spicy Quorn fillets, flavoured with teriyaki sauce and sprinkled with sesame seeds, all wrapped in nori sheets. That just sounds like heaven in a meal. Cauliflower alfredo and tofu pasta

Given that alfredo pasta is a cheese and butter-based meal, it's hard to imagine what it might taste like when that's replaced with cauliflower and nutritional yeast. This looks utterly delicious though, and coupled with the baked tofu 'sausage' flavoured with garlic and onion powder, sage, paprika, basil and fennel seeds. Coconut-chocolate pear oats

It's way past breakfast but this sort of thing is giving us a craving for a second breakfast. Made from oats, pear, cacao powder, Alpro coconut milk, Alpro mango yoghurt, tahini, hemp seeds and dates - it's bound to satisfy any major sweet tooth. We cannot wait to try this recipe from charlotteemmma.

Ginataang Gulay

Another one from thefoodietakesflight, this is a Filipino recipe which is essentially a coconut milk and vegetable curry. It looks so simple to make too; the vegetables are onion, garlic, string beans and pumpkin. Feels quite autumnal, but we can't wait to try it as soon as possible.

Chickpea pancake

Pancake day may have come and gone but if we could have done it again we'd have made these vegan pancakes with quinoa, cherry tomatoes, arugula, avocado, hemp seeds and turmeric dressing. It's pure beauty on a plate, originally posted by blogger myveggiefeast.
