TGI’s Skinny Cocktail Recipes

Adi Astley, T.G.I. Friday’s UK Head Bartender, researched the cocktail scene across the world to develop these lovely skinny cocktails to bring in the New Year, enjoy!

Skinny Long Island Iced Tea

• 1/5 oz gin

• ½ oz vodka

• 1/5 oz rum

• 2oz Agave Sour (see below for recipe)

• Top with diet coke

• Garnish with a lemon slice

Method:

Shade ingredients with ice, pour into glass over cubed ice and top with diet coke.

Adi Astley, T.G.I. Friday’s UK Head Bartender says: “A Friday’s original which is enjoyed across the world, we’ve made this one a little lighter by switching to diet coke as well as using agave natural sweetener.

Skinny Margarita

To make this, you will first need to create the Agave Sour recipe:

T.G.I. Friday’s Agave Sour recipe:

• 250ml lime juice

• 250 ml lemon juice

• 250ml sugar free syrup (125g Splenda mixed with 12oz hot water)

• 1oz agave/nectar syrup

Method:

Mix thoroughly and keep chilled, this mix will last for three days and can be used for several cocktails.

Skinny Margarita recipe:

• 1 ¼ oz Cuervo Gold Tequila

• 30z Agave Sour (see above recipe)

• Lime slices to muddle

• Garnish: salt rim, lime wedge

Method:

Muddle limes and add ingredients and shake with ice. Wet glass rim and dip into salt. Pour drink into glass through a strainer and add the lime slice to finish.

Adi says: “You can also make a Skinny Blackberry Margarita by replacing the limes with three Blackberries, but still add a lime wedge to garish to add to the flavour.”
