Hello everyone,

Caroline Oldham

I hope you are all enjoying the nice weather, we have had some lovely days here in Brighton at the moment, it isn't really warm but Spring is one of my favourite months and it is definitely here. This month the soups settle down and I am all about the salads, the almond milk teas and lattes take a side step and are replaced by natural fruit infused waters and coconut water for hydration. It is really important as the weather becomes warmer to keep our bodies hydrated. Not only will you feel better, with more energy, but you will also find a difference in the colour and look of your skin, it really does have a huge impact on your daily life. I have managed to book in a few long weekend getaways over the coming months, I love to explore food in different areas and countries.

So towards the end of the month, I am going back to Lake Garda in Italy for my birthday and we have some new restaurants that serve excellent gluten free restaurants so I shall report back on that. I am also meeting one of my best friends who I used to live with in Dubai, in France in a small town called Nantes, this may be a little more challenging to find gluten free options, however, I shall let you know. Lastly, another great friend of mine has just relocated to Geneva with her family and is expecting her second child so we decided it was a good chance for some of us girls to go and visit them and also have a fun girly weekend away. I am going with two of my 'very' active girlfriends so I am expecting them having me hike up mountains so I shall definitely need some good protein filled meals.

So the salad I am going to share with you this week is my apple and Brussel sprout salad, you can imagine with these ingredients the amount of vitamins and nutrients you are going to get from this. It is so tasty, easy to make, great for lunches at work but also to accompany with a BBQ chicken roast.

Restaurant Hangout of the Week

This week I have been in Brighton most of the week, so have been meeting up with some friends and revisiting some of my hot lunch spots which I haven't managed to make time for recently. I went to Foodilic which is a small restaurant/café located on North Street in the centre of Brighton, they also have a larger sister restaurant on Western Road. It is a really cute, cosy place to go and the food is outstanding. They have a very popular buffet set up, all labelled with what is in each in salad and a notice for people who suffer from food allergies, you can ask the staff what you can and can't eat.

There aren't many options that contain gluten, they usually have a cold pasta salad and a couscous, which can we easily avoided as there are about 8 other delicious salads to choose from. They have lots of seating for such a small place but make sure you get there early as it really does fill and by 12.30pm there is not a seat to be had! The buffet price is £6.95 per adult and £3.50 per child which I think is a really good deal as you can go up and down as many times as you like.

Top Tip of the Week

If you love your sweet treats but want to cut down on sugar I suggest making my raw chocolate, it is delicious and if you don't like a bitter taste, add some dried cherries or cranberries.
