Low Carb Recipe: Gingered Vegetable Soup

Cutting down on your carbs is one of the best ways to beat the bloat and is much better for your health.

This recipe is perfect when trying to cut carbs from your diet but keep your meals tasty!

Here’s what you’ll need and how to do it -

Gingered Vegetable Soup

Serves: 4

Ingredients:

250g Butternut Squash

1 large carrot

1 large potato

1 red pepper

1 onion

750ml Vegetable stock

1 tbsp Gourmet Garden Garlic

2 tbsp Gourmet Garden Ginger

1 tbsp Gourmet Garden Chilli

1 tbsp Gourmet Garden Coriander (optional)

1 tbsp vegetable oil

Method:

Cook onion in oil until golden.

Add carrot, potato and butternut squash cut into small cubes to vegetable stock. Cook until vegetables are tender, roughly 20 minutes.

Add red pepper cut into cubes. Add Gourmet Garden Garlic, Ginger and Chilli. If you would like it spicier add a little more chilli and Gourmet Garden Coriander.

Blend lightly so that the soup is not too thick, add more stock as necessary. Return to heat and serve garnished with cracked black pepper.
