New research has revealed a shift in the nation’s eating habits, as half (52 per cent) of Brits report a new-found appreciation for nature and the great outdoors. For those who have found spending more time in nature has impacted what they consume, nearly half now prefer to eat organic foods as a result. 1 in 4 have even considered foraging for their own ingredients, a figure which jumps to almost 42 per cent for people aged 35-44.

This growing affection for nature has also driven 41 per cent to cook with more fresh and natural ingredients, as well as encouraging 36 per cent to buy ingredients that are better for the environment – including shopping locally and seeking food products packaged in recyclable materials.

Since the start of the pandemic, Brits have eaten more fruit (31 per cent), vegetables (30 per cent) and eggs (24 per cent) - and organic egg brand, Purely Organic who conducted the research, has seen sales quadruple over the past year.

Chef, Gizzi Erskine, who is working with Purely Organic said: “I have long been a big advocate for organic food and wherever possible, will opt to cook my meals with organic ingredients. It’s great to see that I’m not alone, as the research shows 21 per cent of us are now trying to use more organic ingredients. I was also really surprised to see that over the past year, more people have perfected cooking an egg than baking banana bread – it turns out that eggs were the true champion of the pandemic! I certainly love using them in my kitchen.”
