Summer is here and it's time to get the barbecue out with these light and tasty low carb recipes from the New Atkins Nutritional Approach. The healthy recipes work well at a summer BBQ, family picnic or simply for al fresco dining with friends.

Spring Pea and Mint Salad with Chargrilled Chicken

Best of all, the recipes are quick and easy to make sure you can spend your time enjoying the sun rather than in stuck in the kitchen.

Serves: 4

Ingredients

  • 4 chicken breasts (with skin)
  • 28g feta cheese
  • 250g snow peas
  • 2 clove(s) of garlic
  • 200g baby spinach
  • 1 tablespoon mint (fresh)
  • 1 tablespoon of olive oil
  • 0.25 teaspoon of ground paprika

Method

  1. Mix ½ a tbsp of olive oil with the paprika, and a pinch of salt and pepper. Brush mixture evenly onto chicken strips.
  2. Place chicken on a preheated barbeque or chargrill pan and cook until crispy. For best results avoid pressing down on chicken pieces.
  3. In a bowl, combine remaining olive oil with the garlic and another pinch of salt and pepper. Mix thoroughly.
  4. Prepare a pot of boiling water, once boiling add in the snow peas and blanch for around two minutes. Remove snow peas from water, and in a serving bowl combine with baby spinach, mint and chargrilled chicken.
  5. Pour over oil mixture and stir through. Crumble feta over the top. Serve and enjoy.
