If you’ve avidly been watching Wimbledon and cheering on your favourite player then chances are you’ll need a drink!
This strawberry Rossini fits in perfectly with the season and can also be used as a cocktail at dinner parties and events.
Here’s everything you’ll need to whip one up!
Preparation time: 5 minutes
8 Capri strawberries, hulled (approx. 120g)
Approx. 300ml chilled Prosecco
Cut 2 thick slices from 1 strawberry and reserve.
Puree the remaining strawberries and pour into 2 champagne flutes.
Top up with Prosecco and serve with the strawberry slice on the rim of the glass.
For a non-alcoholic version, add 1 tbsp elderflower cordial to each glass and top up with sparkling water.
