Fruity Cheese Cakes 

Occasion: Pudding

Ingredients:

100g Organix Gingerbread Men

25g organic unsalted butter

For the cream cheese filling:

100g full fat organic cream cheese

100g Organix fruit puree

 100ml organic double cream

25g organic unsalted butter

Instructions:

Step 1 - Crush the biscuits into bread crumb sized pieces

Step 2 - Next melt the butter in a saucepan and then add the crushed biscuits to the butter and mix together.

Step 3 - Divide the butter and biscuit mixture evenly between 6 ramekins and press down until mixture forms a flat base.  Place them in the fridge until cold.

Step 4 - Next, mix the cream cheese with the fruit puree until softened.

Step 5 - In a separate bowl whip the cream until it forms peaks.

Step 6 - Gently fold the whipped cream into the cream cheese mixture and spoon onto the chilled biscuit base.  Smooth the top and put back the fridge to chill.

Step 7 - When you're ready to serve, top with your favourite fruit puree.  We used Organix Fruit Puree and Organix Fruit Squeezy.

Banana Bread

Occasion: Breakfast/snack

Ingredients:

170g organic ripe bananas, mashed

70g organic vegetable oil

2 organic eggs

120ml water

1 teaspoon. organic vanilla extract

250g organic self-raising flour

1 tsp bicarbonate of soda

2 tsp baking powder

half tsp. organic cinnamon powder

80g or 5 boxes of Organix Goodies Apples and raisins

Instructions:

Step 1 - Beat together the mashed banana, oil, eggs, and water until creamy.

Step 2 - Mix in the flour, baking powder, bicarbonate of soda and cinnamon.

Step 3 - Stir in the chopped fruit.

Step 4 - Spoon into a 1lb loaf tin and level off.

Step 5 - Bake in oven at 200 degrees for 40-45 mins or until the knife comes out clean when inserted.

Step 6 - When cooked tip out and place on wire rack and leave to cool before slicing.

Step 7 - Good on its own or to make it extra yummy for mum on Mothers Day spread with a little butter.

Ricotta & Chive Pancake with Poached Salmon & Egg

Occasion: Lunch, Dinner

Ingredients:

For the pancake:

250g organic ricotta cheese

125ml organic whole milk

2 large organic eggs, separated

100g organic plain flour

1 teaspoon baking powder

3 teaspoons chopped organic chives, plus extra for sprinkling

For the top:

2 fillets of organic poached salmon cooked and flaked

2 organic poached eggs

Instructions:

Step 1 - Put the ricotta, milk and egg yolks into a medium bowl and mix well to combine. Stir in the flour, baking powder and chive and whisk into a smooth batter. Whisk the egg whites until they become foamy and then fold them into the ricotta mixture.

Step 2 - Heat the oil in a large frying pan and drop in a ladle of batter.

Step 3 - Cook the pancakes for about 1 minute until golden and then flip them over and cook for another minute.

Step 4 - Place 2-3 pancakes on a plate, topped with flaked salmon, then the poached egg and sprinkle with some chives. Serve warm.
