It can be difficult to decide what type of food to prepare for a baby. Here, Organix shares three healthy, delicious and fun recipes that are easy to prepare and tasty too.

Pear & Blackberry Cobbler

Occasion: Pudding

Ingredients:

FILLING:

3 soft organic pear, peeled & chopped

250g organic blackberries

Zest of 1 organic orange

3 tbsp organic honey

COBBLER:

225g organic self-raising flour

2 tsp baking powder

75g chilled organic butter

120g organic honey

1 medium organic egg

1tsp vanilla extract

3 tbsp organic whole milk

Instructions:

Step 1 - Preheat oven to 180°C/gas mark 4. Put chopped pear & blackberries in an oven proof dish (28cm round). Drizzle 3 tbsp honey over the fruit and sprinkle with orange zest.

Step 2 - Sift the flour and baking powder into a bowl or a food processor, add the butter and work together until the mixture looks like fine breadcrumbs. Add honey, egg, vanilla extract and milk and mix into a smooth soft sticky dough (add more milk if require).

Step 3 - Drop spoonfuls of the mixture over the fruit, leaving a little space between each one. Bake for 20-25 minutes or until golden and bubbling. It is done when a skewer, pushed into the middle of the cobbler topping, comes away clean. Serve with custard or ice cream.

Courgette Pea & Bean Frittata

Occasion: Lunch/dinner

Ingredients:

4 organic eggs

1 organic courgette

50g organic fresh or frozen peas (defrosted)

150g organic broad beans

50g grated cheddar

1 handful of organic basil

Black pepper

Instructions:

Step 1 - Preheat the grill to 180c

Step 2 - Grate the courgette and leave to drain on some kitchen towel so the courgette is quite dry.

Step 3 - Meanwhile cook the broad beans in boiling water for a few minutes until the skins soften.

Step 4 - Run under cold water to cool the beans and remove the grey outer skins and discard leaving the green beans.

Step 5 - In a large bowl beat the 4 eggs with some black pepper.  Add the grated courgette, beans and peas to the egg mixture.

Step 6 - Stir in half the grated cheese, tear in the basil and mix until thoroughly combined

Step 7 - Heat a frying pan (that is suitable to later go under the grill) and add a little olive oil to the pan.

Step 8 - Add the egg mixture and cook until the bottom is golden and the top starts to set.

Step 9 - Sprinkle the rest of the cheese on the top and place under the grill for a few minutes until the top is nicely golden.

Mozzarella and Basil Focaccia

Occasion: Snack

Ingredients:

500g organic strong white bread flour

7g sachet yeast

3 tablespoons organic olive oil

Handful of organic basil

Half a ball of organic mozzarella

Instructions:

Step 1 - Put the flour and yeast into a bowl, mix together and add 325ml tepid water.

Step 2 - When the dough starts to form use your hands to bring the ingredients into a ball.

Step 3 - Lightly dust your work surface with flour and tip out the dough and knead it for 10 minutes.

Step 4 - Place the kneaded dough into an oiled bowl and cover with a lightly oiled piece of cling film to stop it sticking.

Step 5 - Leave the dough to prove in a warm place for an hour until the dough has doubled in size.

Step 6 - Next, remove the dough and stretch across a baking sheet (20cm x 30cm).

Step 7 - Cover the dough with a damp tea towel and leave in a warm place for 30-40 minutes until the dough has risen slightly.

Step 8 - Meanwhile, chop the basil and mix with the olive oil and tear up the mozzarella and set the oven to 180c or gas 4.

Step 9 - When the dough has risen, press your fingers into the dough to make small holes and drizzle over the basil oil and scatter over the mozzarella.

Step 10 - Bake in the oven for 20-25 minutes or until the bread is golden.

Step 11 - Cut the bread into fingers and serve warm with one of our Savoury pots as a dip!
