Bloody Cuke

The beetroot/beet gives this juice a rich magenta colour, and its earthy flavour is diluted by the cucumber and sweetened by the apple.

Ingredients 

1 cucumber, plus a wedge to serve (optional)

2 apples

1 beetroot/beet

Ingredients 

Chop the cucumber into pieces that will fit through the juicer shute, skin and seeds and all. Cut the apples into quarters, remove the cores and stalks and push through the juicer. Remove the stalks from the beetroot/beet and chop the root, reserving the leaves, if you like. Juice the chunks and leaves, if using.

Once all the ingredients are juiced, give the drink a stir to combine before pouring into a glass or chilling before drinking. If you like, cut a chilled wedge of cucumber to serve in the drink for stirring or nibbling.
