Raw Chocolate Cake

INGREDIENTS

Base:

o     1 cup walnuts

o    1 cup dates

o    Filling:

o    1 cup soaked cashews (overnight)

o    1/2 cup Protein World coconut oil, melted

o    2 heaped tbsp cacao or cocoa powder

o    1/4 cup water

o    Sweetener of your choice: date syrup, agave, orange zest etc

METHOD

  • For the base
  • Process walnuts to the consistency of granules. Add dates and process to a doughy texture. Not too much or it becomes oily. Press down into a cake tin, refrigerate
  • For the filling
  • Process cashews, oil, cacao, sweetener (to taste) and add water slowly until it's a cream. Pour over base. Refrigerate for minimum of three hours. Garnish with orange zest
  • Serves 10
