Zanna van Dijk’s Blondies


  • 1 cup of Almond Breeze Nutri+ Fibre
  • 1 can of drained & rinsed chickpeas
  • 1 tsp baking powder
  • 1 cup of melted peanut butter
  • 1 tsp vanilla extract
  • 1/2 cup of maple syrup
  • 1/2 cup of ground almonds
  • 1/2 cup of cranberries
  • 1/2 cup of cacao nibs or vegan chocolate chips


  1. Blend 1 can of drained & rinsed chickpeas with the Almond Breeze Nutri +Fibre
  2. Add to a bowl and then stir in the remainder of the ingredients
  3. Combine until smooth then pour into a greased baking tray. Bake in a preheated oven at 200 degrees for 30 minutes.
  4. Leave to cool before slicing up and enjoying!
