Vegan Curry

Vegan Curry

Ingredients 

10 baby new potatoes

4 tbsp cashew nuts

1 can of coconut cream

1 tsp cumin powder

4 cloves of garlic

4 tsp of mild curry powder

2 shallots

2 tbsp sunflower seeds

1/2 pack of swiss chard

1/2 cube of vegetable stock

1 tbsp vegetable oil

2 pinches of ground pepper

2 pinches of sea salt

Method

  1. Wash all ingredients. Peel & mince the garlic & shallots, roughly chop the swiss chard & halve the potatoes.
  2. Place the seeds & nuts in a frying pan. Cook them without oil over a medium heat for 5 minutes. Remove when they’re golden & fragrant. Set aside.
  3. Return the same pan or a wok to the hob. Heat over medium high heat, then add the oil, garlic & shallot. Cook for 3 minutes or until softened. Stir to avoid burning.
  4. Add the potatoes, curry powder, cumin, salt & pepper, and crumble the stock cube in. Toss around for 1 - 2 minutes until the potatoes are fully coated in the mix.
  5. Add boiling water until the potatoes are just about covered. Boil for 15 minutes over a high heat.
  6. Add the chard & the coconut cream. Mix well & cook for another 5 minutes over medium heat.

Check that the potatoes are thoroughly cooked. Remove from the heat, serve in a bowl, and add the cashew & seed mix over the curry. Serve with warm pita bread.
